15 Minute Weight Loss Dinner from Trader Joes

Looking for a quick weight loss meal that will make your personal trainer in Chicago happy?  Head to Trader Joe's for quick shopping and dinners.  From organic products to freshly chopped veggies, shopping and making weight loss dinners have never been easier.

Recently, my personal training clients were asking about a seafood dinners that won't add the pounds.  One of my favorite go-to dinners is the Sauteed Seafood Mix with White Beans and Roasted Tomatoes and Asparagus.

Here is your weight loss Trader Joes shopping list:

-Frozen seafood mix (scallops, shrimp, and calamari)

-Grape tomatoes

-Fresh or frozen asparagus

-Salt, pepper, garlic, and italian seasoning

-Can of organic white beans

-Olive oil

Directions:

Oven roast the sliced tomatoes and chopped asparagus until there's a slight crisp (oven: 375 degrees).  Meanwhile, saute the seafood mix (pat dry first) in 1 tablespoon of olive oil.  Once the mix is fully cooked, simmer while you add the roasted veggies, 1 tablespoon of olive oil, and the salt, pepper, garlic and italian seasoning.(add whatever amount to taste).  In a separate pan, saute the drained and rinsed white beans in 1 teaspoon of olive oil and the same seasoning mix.

Chicago Personal Trainer Tip:  Use less olive oil to minimize fat and calories.
